Roast Garlic & Tomato Chicken with Green Sicilian Olives

Ingredients

  • 4 pieces The Stores Grocer sous vide chicken from our deli window
  • Olive oil
  • 1 00g Sicilian green olives
  • 1/4 cup dry white wine
  • 1 /2 cup The Stores Grocer intense chicken stock
  • 1 jar Sacla cherry tomato roast garlic sauce
  • 2 cubes Meredith goats fetta
  • 1 tbsp. chopped fresh parsley

Directions

  1. Pre-heat oven to 240 degrees
  2. Oil base of ovenproof dish with olive oil & add olives
  3. Add chicken pieces skin side up
  4. Brush chicken skin with olive oil & sprinkle with sea salt
  5. Place in pre-heated oven for 1215 minutes
  6. Remove from oven & add white wine, chicken stock & cherry tomato sauce
  7. Reduce temperature to 180 degrees & return chicken
  8. Cook for a further 6 minutes
  9. Remove from oven, crumble in fetta & sprinkle with herbs

Can be served with pasta, mash potato or cous cous.
