Roast Garlic & Tomato Chicken with Green Sicilian Olives

Ingredients
- 4 pieces The Stores Grocer sous vide chicken from our deli window
- Olive oil
- 1 00g Sicilian green olives
- 1/4 cup dry white wine
- 1 /2 cup The Stores Grocer intense chicken stock
- 1 jar Sacla cherry tomato & roast garlic sauce
- 2 cubes Meredith goats fetta
- 1 tbsp. chopped fresh parsley
Directions
- Pre-heat oven to 240 degrees
- Oil base of ovenproof dish with olive oil & add olives
- Add chicken pieces skin side up
- Brush chicken skin with olive oil & sprinkle with sea salt
- Place in pre-heated oven for 12–15 minutes
- Remove from oven & add white wine, chicken stock & cherry tomato sauce
- Reduce temperature to 180 degrees & return chicken
- Cook for a further 6 minutes
- Remove from oven, crumble in fetta & sprinkle with herbs
Can be served with pasta, mash potato or cous cous.
